Spaghetti Pie

Spaghetti just got easier and yummier. Cook pasta of your choice and meat of your choice and layer in a pie dish and bake. Voila! A yummy quick dish that, and I mean it, everyone will LOVE!

You can use whatever pasta you have on hand. You can use turkey, beef or chicken.

Bake it. Cut it into wedges and you have yourself Spaghetti Pie. Perfect with a salad and garlic bread!

Spaghetti Pie

12 oz. Spaghetti, cooked (reserve 1/2 cup cooking water)
1/2 Small Onion, chopped
1 lb. Ground turkey or beef
1 C. Tomato Paste
3 Eggs
1 Cup Parmesan Cheese, grated
1 1/2 Cup Mozzarella Cheese
2 TBSP Olive Oil
Salt to taste

Preheat oven to 350 degrees.

In a large skillet cook meat. When almost cooked through add onions and saute until soft. Drain meat mixture.

Add 3/4 cup of tomato paste and half of reserved pasta water. Stir well. Season with salt to taste. Add more cooking water if needed.

In a large bow mix together the cooked spaghetti, eggs, Parmesan cheese, 1 cup of Mozzarella cheese and 1/4 cup of tomato paste.

Grease 10 inch pie pan with olive oil. Spread half the meat mixture in pan.

Add spaghetti mixture and press down to level it. Top with remaining meat mixture then scatter the remaining Mozzarella cheese on top.

Bake the pie for 30- 35 minutes. Remove from the oven and let sit 10 minutes. Use a sharp knife to cut spaghetti pie into wedges.

Sweet Broccoli Salad

Fresh, cold and delicious, this Sweet Broccoli Salad is perfect for so many occasions.

I made Fall of the Bone Ribs and had this easy to assemble salad with them. They went together perfectly. We love this salad any season and with about any meats, fried chicken would be great, or a steak.

This sweet broccoli salad would also be the perfect combo with a sandwich like my Pulled Chicken Sandwich or Chicken Sandwich with Cilantro Lime Mayo. YUM! Sandwich/Salad perfection!

Broccoli Salad

1 lb. Fresh Broccoli, cut into bite-sized pieces
1/2 lb. Bacon, cooked and chopped
1/4 Cup Red Onion, diced finely
1/2 Cup Craisins or Grapes
1/2 Cup Sunflower Seed Kernels
1 Cup Light Mayonnaise
1/3 Cup Sugar
2 tsp. White Vinegar

Toss broccoli with bacon, onion, craisins or grapes, and sunflower kernels.

Whisk together mayo, sugar, vinegar. Toss dressing in with broccoli salad an hour or two before serving.

These Chocolate Butterscotch Bars grab people’s attention! Hello sweet goodness!! Did I mention they are EASY to make as well with just six ingredients! Booya! You had me at peanut butter and chocolate!

Cereal Bars.1

1 Cup Sugar
1 Cup Light Corn Syrup
1 Cup Creamy Peanut Butter
6 Cups Rice Krispies Cereal
1 Cup (6 oz.) Semi Sweet Chocolate Chips
1 Cup (6 oz.) Butterscotch-flavored Chips

Grease or lay parchment in a 13 x 9″ pan.

Combine sugar and corn syrup in a large saucepan; bring just to a boil over medium heat, stirring constantly.

Remove from heat and stir in peanut butter. Stir in cereal. Press into the prepared pan.

Melt chocolate and butterscotch chips in microwave on medium high heat (70%) power for 1 minute; Stir. Microwave at additional 10 – 20 second intervals, stirring until smooth. Spread over cereal mixture.

Honey Garlic Shrimp with Broccoli

This Honey Garlic Shrimp with Broccoli is pure heaven. Lightly sweetened because of the honey and full of flavor with just 6 ingredients. 6, SIX measly ingredients! Honey, ginger, garlic and soy. The only other two are shrimp and broccoli. That makes me happy!

I like a good meal. I love, love, love when it’s easy. Life is busy. I don’t want my family to eat junk so if I can throw together a dish life this once in a while that everyone enjoys and takes about 20 minutes to prepare, I most certainly WILL!

1 lb. Shrimp, shelled and deveined
2 TBSP Garlic
1 tsp. Ginger, grated
1/2 Cup Honey
1/2 Cup Soy Sauce
4 Cups Broccoli

Mix garlic, ginger, honey and soy in a small bowl.

Honey/Soy

Place shrimp in a large resealable bag with about 1/3 of the honey/soy mixture. Marinade for about an hour in the refrigerator.

Marinade

Heat oil in a large skillet over medium-high heat. Saute broccoli until al dente. When almost there toss with 2 TBSP of the honey/soy mixture. Remove broccoli from pan and set aside.

Drain shrimp and discard marinade. In same skillet add marinated shrimp. Cook about 1 minute on each side. Toss with a couple tablespoons of the honey/garlic mixture.

When shrimp are cooked return broccoli to skillet. Heat 2 – 3 minutes tossing with any leftover honey/soy mixture.

Sun-dried Tomato Mozzarella Chicken Pasta

Awe yes! Something new and interesting to add to the dinner routine. I don’t often use sun-dried tomatoes, but they certainly add a twist and interest to a meal.

Pasta and chicken always go over in this household so it’s nice to throw in an unexpected surprise.

Sun-dried tomatoes have iron, calcium, antioxidants, fiber and more, so not a bad thing to liven up your chicken or pasta.

3 Garlic Cloves, minced
1 small Jar (3-4oz.) Sun-dried Tomatoes in oil
1 lb. Chicken tenders or Chicken sliced
Salt
Paprika
1 Cup Milk
4 oz. Cream Cheese
1 C. Mozzarella Cheese
12 oz. Pasta (whatever shape you prefer)
1 T. Basil
1/4 tsp. Crushed Red Pepper Flakes
1/2 C. Reserved Cooked Pasta Water

In a large pan over high heat saute sun-dried tomatoes using 2 tablespoons of oil from jar to saute. Add garlic and saute for 1 minute.

Remove sun-dried tomatoes and add chicken to pan. Sprinkle with salt and paprika. Cook 1 – 2 minutes on each side.

Cook pasta according to package directions. Reserve 1 cup of pasta water. Drain cooked pasta.

Slice sun-dried tomatoes into smaller pieces and add them back to pan with chicken,

With heat at medium add milk, cream cheese and Mozzarella cheese. Stir until cheese is smooth. Add pasta water if sauce is too thick. Warm sauce thoroughly.

Add basil, crushed red pepper and salt, if needed, to chicken mixture.  You can also add pasta to chicken mixture or keep separate.

Simmer for a few minutes and serve warm.

It’s cookie time so what’s a person to do, but bake up the most amazing cookies EVER! Flourless, moist, flavorful and incredible!

These Monster Cookies are so, so easy to make because you just dump most of the ingredients together. Mix, mix, mix. Then dump in the chocolate chips and M & M’s. Mix, mix, mix.

I know, I know you aren’t supposed to eat the dough, but if you happen to get some on your finger and it happens to end up in your mouth, it is AWESOME! LOVE the dough!!! LOVE the cookies!!! LOVE the recipe!!! LOVE the little time it takes to make!!!

All basic ingredients that make an OUTSTANDING cookie for all you cookie monsters out there, like me!

1 C. Butter
1 C. Brown Sugar
2 C. Sugar
6 Eggs
1 T. Vanilla
1 1/2 tsp. Corn Syrup
1 TBSP + 1 tsp. Baking Soda
24 oz. Peanut Butter
9 C. Oatmeal

1/2 lb. M & M’s
1/2 lb. Chocolate Chips

Cream butter and sugars. Add eggs. Mix thoroughly then add vanilla, corn syrup and baking soda. Mix thoroughly and add peanut butter and oatmeal

Bake at 350 degrees for 9 minutes.

Homemade Teriyaki Sauce

Homemade Teriyaki Sauce has just 6 very basic ingredients. The sauce I used previously had water, vinegar and soy, but it also had succinic acid, disodium inosinate among other crazy, highly syllabic words.

I will admit I did really like it..until I made my own in less than 5 minutes. Ugh! No comparison. I know I’ll never go back to the bottle, not when it’s so quick to make at home and it tastes sooooo, sooooo much better!

1/4 C. Soy Sauce
1 C. Water
1/2 tsp. Ground Ginger
1/4 tsp. Garlic Powder
5 TBSP Brown Sugar

2 TBSP Cornstarch
1/4 C. Water

Teriyaki Sauce.1

Add soy sauce, water, ginger, garlic powder and brown sugar to a small sauce pan. Heat slowly as sugar dissolves.

Meanwhile, combine cornstarch and water in a separate dish. Add to saucepan. Heat slowly as the sauce thickens.

Enjoy over chicken, pork, beef, rice , veggies and more!

Inspired by Cafe Rio this Sweet Pork Salad is incredible (!) and much like the restaurant’s version, but dare I say better!

You can vary the toppings based on what you like. It deliciously includes Cilantro Ranch Dressing, Saucy Black Beans,  Cilantro Lime Rice, Homemade Tortilla Strips.. All of those elements are included on this website and are remarkably easy to prepare. All the better to enjoy, right?

It’s fragrant and has an inviting depth of flavors. Cilantro Lime Rice is much like your favorite restaurant’s…just better! Why? Because you know the exact few ingredients that are in it.

Enjoy it however you want to eat it, in a burrito, rice bowl, salad or on it’s own. It definitely holds it’s own!

1 C. Uncooked Long Grain White Rice
1 tsp. Butter
2 Cloves Garlic
1 tsp. + 1 TBSP Freshly Squeezed Lime Juice
15 oz. Chicken Broth
1 C. Water
2 tsp. Sugar
3 TBSP Fresh Chopped Cilantro

In a saucepan combine rice, butter, garlic, 1 tsp. lime juice, broth and water.

Bring to a boil. Cover and cook on low about 20 minutes.

In a small bowl combine 1 TBSP lime juice, sugar and cilantro.

Rice Sauce

Remove rice from heat. Stir in lime, sugar, cilantro mixture and combine as you fluff the rice.

Ingredients:

1 Packet Traditional Hidden Valley Ranch mix (not Buttermilk)
1 C. Mayonnaise
1 C. Buttermilk
2 Tomatillos, remove husk, diced
1/2 Bunch Fresh Cilantro
1 Clove Garlic
Juice of 1 Lime
1 Jalapeno, sliced

Mix all ingredients in a blender and whirl.
